Notes:
1. Hygienic standards for microbiological safety indicators and nutritional value of food products cover the following groups of microorganisms:
hygiene indicator microorganisms, which include the quantity of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM), coliform bacteria (coliforms), bacteria of the family Enterobacteriaceae, and enterococci;
opportunistic pathogenic microorganisms, which include E. coli, Staphylococcus aureus, bacteria of the genus Proteus, B. cereus and sulphite-reducing clostridia, and Vibrio parahaemolyticus;
pathogenic microorganisms, including salmonellae and Listeria monocytogenes, and bacteria of the genus Yersinia;
spoilage microorganisms, which include yeasts, moulds and lactic acid microorganisms;
starter microflora microorganisms and probiotic microorganisms (lactic acid microorganisms, propionic acid microorganisms, yeasts, bifidobacteria, acidophilic bacteria and others) – in products with a standardised level of biotechnological microflora and in probiotic products.
2. For most groups of microorganisms, microbiological safety indicators of food products are standardised according to the alternative principle. The standard specifies the mass of product in which coliform bacteria, most opportunistic pathogenic microorganisms, and pathogenic microorganisms, including salmonellae and Listeria monocytogenes, are not permitted. In other cases, the standard specifies the number of colony-forming units per 1 cm3 (g) of product (CFU/ cm3 (g)).
*QMAFAnM – quantity of mesophilic aerobic and facultative anaerobic microorganisms.
**CFU – colony-forming units.
***Coliforms – coliform bacteria.
****Yeast content at the end of the shelf life: not less than 1 x 104 for ayran and kefir, and not less than 1 x 105 for kumis. Yeasts are permitted in products manufactured with yeasts in the starter culture.
*****Mass of product (g) in which ... is not permitted: 125 g (for soft and brined cheeses – in 5 samples of 25 g each).
******Levels of toxic elements, potentially hazardous substances, mycotoxins, antibiotics, pesticides, radionuclides, microorganisms and oxidative spoilage must not exceed the permissible levels established for raw milk by Annexes No. 1 – 4 to the Technical Regulation of the Customs Union "On Safety of Food Products" (TR CU 021/2011) and by Annex No. 4 to the Technical Regulation of the Customs Union "On Safety of Milk and Dairy Products" (TR CU 033/2013). Identification indicators must comply with the parameters given in Table 1 of Annex No. 6 to the Technical Regulation of the Customs Union "On Safety of Milk and Dairy Products" (TR CU 033/2013).
